Abstract: Tracking and tracing for allergen-free food production chains has become important due to consumer-safety concerns and new international labelling regulations. An overview of the technical possibilities and commercially available kits for the detection of residual allergenic foods in the food production chain and in the final food production are given, including the discussion of some pros and cons when considering the right choice of method for certain applications.
