Geographical origin authentication via elemental fingerprint of food

Traceability of geographical origin of food is important because consumers would pay a higher price for local food and for food with geographical origin labels, and because local food production is linked to social and economic sustainability of rural areas. Digital tools such as Blockchain that allow to store data in a way that cannot be modified, covering the full food system, have a high potential. Nevertheless, they need to be combined with with audit schemes and product testing. Characterisation of the elemental fingerprint of food is an efficient way to authenticate its geographical origin. Control laboratories are properly equipped for elemental analysis, and standardisation and comparability of results is warranted.
